[frozen-assets] Re: What Happened????? and freezer cooking for elderly.

 

yep, I am still here, and you are quite right, I am an empty nester now (have a six year old grandson!). However, I am getting back into freezer meals due to the fact that I am going to have to start making individual meals for my mother. Ah, the "sandwich generation"!

I am thinking that I am going to be using muffin tins to portion out the foods and freeze each menu item separately so as to give Mom some control of what she eats with what. Anyone have other ideas?

[frozen-assets] Questions on Lunch Ideas - Freezing, Reheating, Etc.

 


I want to make some meals, that I can reheat in the microwave (at work) for lunch. I would also use some of this if I need a quick dinner… or if I am on my own and only need a single serving of something… similar to a TV dinner or frozen dinner from the store… only healthier, and I'd have more control over exactly what I'm eating…

I know I can always bring leftovers, or salads, sandwiches, etc. But I'd like some other suggestions, as well.

I was thinking about things like rice bowls (with rice, chicken, veggies, etc). If I make all the parts ahead of time (cook the chicken and rice, veggies if necessary, etc) and freeze. Then just thaw and reheat at lunch – will it turn out OK? Or do I need to undercook so that reheating doesn't overcook it? Any suggestions for recipes or cooking instructions on these? What sauces to use?

I was also thinking about beans and rice – any particular suggestions how to do this? I'd like to get into using dried beans (as opposed to canned) but only if I can find ways to keep them (in the freezer?) and use them in various dishes after that…

Also, similar situation with meatloaf. I was thinking of making some mini meatloaves … but will they overcook if reheated? If so, by how much do I undercook to begin with? And then how much to heat up when it comes time to eat?

I am very much a novice when it comes to cooking – I pretty much don't (although I need to get better about making dinner for DH, myself and my 5 year old son)… so any and all suggestions, tips, etc are greatly appreciated – nothing is too basic for me :)

I am also trying to stay away from wheat – so that limits things like pasta and sandwiches…

I appreciate any help you can give.

[frozen-assets] Re: Hints for using vacuum sealer bags

 

I have had one of these devices for the past few years and love mine. the other day I purchased a 20-lb. box of blueberries and put most of them in sealer bags for the freezer. What I did was first rinse and pick over the berries for twigs, bad ones, etc. I then measured out four cups of berries for each bag. When I filled the bags, I then folded down the top and clipped it with a clothes pin. The bags then went into the freezer until the berries were frozen.

The next day I took my sealer down to the freezer and sealed the bags. Before I placed the top into the sealer, I flattened out the frozen berries and held them flat as the air was sucked out of the bag. That way the bags can be stacked flat in the freezer and take up much less space. When they are removed from the freezer, there won't just be a big hunk of berries. 8-)

I have followed this method for freezing other fruits and veggies. It is nice to take the foods out of the freezer and not have to worry about freezer burn.

[frozen-assets] Questions on Meal Pre-Prep

 

What sorts of pre-prep work do you do? And how do you store it – and how long/how well does it store?

My situation is this:

There are only 3 of us, DH, myself and DS 5 years.

I do try to pre-cook meats (shredded chicken, ground beef) or freeze whole chicken breasts in marinade, etc.

But I am looking for other things I can prepare ahead (without cooking the whole meal in advance, although in some cases I may do some of that as well).

The other thing I was considering was things like salads… it would be nice to wash/chop, pre-prepare salad toppings maybe once or twice a week – instead of every night… especially if there's things we don't eat very much of in one sitting...likewise for taco toppings and probably some other items, as well…

That would also better allow us to eat slightly different toppings (from each other) if we wanted – if they were just in the fridge and we could use what we wanted to… because the amounts then would be even less per meal (as compared to if we all ate the same)… and not hardly worth making up each time for just one person…

How long would this stuff last in the fridge? What things like this do you do to make meal prep easier? Any other tips/suggestions for doing these types of things?

Some items I am thinking of (although I am sure there are more, and am always interested in ideas!) would be:

Can I wash these items ahead of time, or do they store better unwashed (but then isn't there more prep, i.e. cutting the day of)?

Lettuce (storing, using – do you wash all at once, or wash as you use to keep it more fresh)?

Tomatoes – wash, cut, diced

Avocado – cut or diced – can these be frozen or would they then not work very well on salads/tacos?

Cucumber – washed, cut

Peppers – washed, cut – can these be frozen for future use on salads? Or do they not turn out very good after being frozen for this purpose?

Fruit – I could probably wash/add this as we use it since there is not TOO much work involved (if I am eating whole, as with raspberries and blueberries)

Nuts – not really any pre-prep involved –maybe pre-portioning and storing, depending on how they are already packaged

Cheese – various kinds for salads and/or tacos; this would mostly be pre-portioning and storing… maybe slicing or shredding.

As I said, I am probably missing some and am always looking for ideas… and other tips you may have with respect to meal preparation.

I am trying to find ways to cut down meal prep time every night - and also be more efficient in my use of time, energy and resources (dishes, knives, etc)
