[frozen-assets] Coking for a Crowd (Kristen)

As a change for your kids' meal, what about Barbecue Cups or Pizza Cups? You could make them at home and transport to warm in the oven. Kids (and everyone else) love these. Deep dish pizza would be another item you could make at home and reheat at the location; also, simple hot ham and cheese subs can be prepped at home and heated before serving.

BBQ Cups
3/4 pound lean ground beef
1/2 cup barbeque sauce
1 tablespoon dried minced onion

1 (12 ounce) package refrigerated biscuit
dough
1/3 cup shredded Cheddar cheese

Directions:
1. Preheat oven to 350 degrees F (175 degrees C). Grease the cups of a muffin pan.
2. In a large heavy skillet over medium heat, cook beef until evenly brown. Drain excess fat. Stir in barbeque sauce and dried onion. Simmer for a few minutes over low heat.
3. Flatten each biscuit, and press into cups of the prepared muffin pan. Make sure the dough comes to the top of the pan. Spoon a portion of the meat mixture into each dough cup.
4. Bake in preheated oven for 12 minutes. Sprinkle with cheese, and bake for 3 more minutes.

note: for pizza cups, sub Italian sausage for the ground beef (or use part sausage, part beef) and mozzarella cheese for the cheddar.

Our small church always made Johnny Marzetti casserole for
group suppers. Chicken or turkey tettrazinni, Cabbage Roll casserole, Hamburger Cheese Noodle Bake or other casseroles would also fill the bill and be easier than baking and carving a ham, plus making side dishes. With a casserole, you only need a salad, bread and dessert.

When it gets cooler, an easy chicken noodle soup or this easy Vegetable Burger soup make a great meal. I've heard that my former church still makes this recipe that I submitted to the church cookbook many years after I moved away.

Vegetable Burger Soup

1 lb Ground beef
2 10-oz pkg frozen mixed vegetables
4 c Water
2 16-oz can stewed tomatoes
1 pkg Dry onion soup mix
1 16-oz can tomato sauce
1 TB Sugar

In large saucepan, brown ground beef.
Drain off excess fat.
Stir in water, stewed tomatoes, tomato sauce, vegetables, onion soup mix and sugar.
Bring to boiling.
Cook and simmer 30 minutes, or put in a crock pot and cook on low for several hours. Serves 6-8. Serve with crackers.
