I used to organize a fundraising staff lunch for the children's hospital
and christmas hampers... would usually end up with 40 meals given out....
A real popular and easy one to do was stuffed baked potatoes... we had
salad on the side (bagged), large baked potatoes, heated chili con carne
in a crock pot, various "toppings" that people would put on their salad
or their potato. If you did something like that and added a homemade
vegetable soup to help fill people up, then it would be a good meal IMHO
