Having just made cream puffs yesterday. I would recommend those. You could
freeze the frozen shells. Defrost, crisp in the oven and then pipe in the
filling. Sounds fussy, but I found it reasonably quick. As for size, I
have a scoop that measures about 1 teaspoon that I used to create bite sized
versions. They were just perfect!
