I would be tempted to make Norwegian fatigman (Have no clue how to spell it!). They are fried dainties that can be made huge or tiny. The dough is rolled flat, cut into squares or rectangles, a slit is put in the middle and the opposite side is slipped through. Deep fry and dust with powdered sugar. Yummy!

Okay Guys, I need some help! I know it is very early, and since many of you
are suffering through very hot temperatures I am quite sure you don't even
want to think about this, but I need some ideas for Christmas Baking!!!!
Yes, you heard me correctly - Christmas Baking! As most of you know I
volunteer as the Chef at the local Salvation Army's Commercial
Kitchen/Restaurant, and help out wherever I can with the food preparations
for other functions and outreach programs.
Our Christmas fundraising and toy drives are already underway, and we kick
off with a Biker's Toy Ride in September. After that, the baking needs will
be steady until January!
As part of the Toy Ride activities, we are hosting a reception for the
bikers, businesses, etc in the evening. We will be decorating the
restaurant with Christmas decorations, and I have been asked to prepare
Christmas finger foods, cookies, and assorted dainties for the approximately
300 people that will be in attendance.
I have the finger food taken care of, but I seem to be having a bit of a
brain freeze when it comes to thinking up a wide variety of Christmas baking
items. This is where I need your help!! What are your favorite Christmas
goodies?? (We are a nut-free facility, so unfortunately anything with
peanut butter or nuts is out.)
I am planning on deep frying many rosettes, and mini filled donuts, but I am
wondering what other things you can think of that are a bit elegant, are
single bite-ish, and are deep fried. That way I can do all the deep frying
at once while I have fresh oil in the fryers.
I have already prepared several mini tarts, (crabapple, mincemeat, raspberry
pumpkin, wild blueberry, peach, rhubarb), as well as several dozen scuffle
cookies. I have a few other things floating around in my mind, but I would
love to hear any and all of your favorites!!
