[frozen-assets] Christmas Baking/Hors D'ouevres Recipes & Update

 

I have been madly working away the past few weeks, trying to get enough
Christmas baking and hors d'ouevres into the freezers to get us through a
couple of big receptions and fundraisers in late September/Early October.
(I am the Pastry Chef for a local major charity) I thought I'd share what I
have made so far. If the recipe is on a website somewhere, I will just
include the link to make it easier on myself ... LOL This is by no means
the entire collection, but it's what I have done right now, so I thought I'd
share.

Here's where I am so far:

more like cookies than a breakfast pastry.)

(I put the choux paste - cooked batter - into a pastry bag with a large
star tip and piped them out into small rounds on the baking sheets. This
makes them look more elegant and keeps them all the same shape and size.
When we need them, I'll thaw them and then fill them just before serving.)

* Mini Tarts (I used Madame Benoit's Lemon Tang Pastry Recipe and made the
tart shells in mini pans. Before baking I filled them with various fillings
- mincemeat, Saskatoon Berries, Blueberries, Crabapple, Raspberry, Butter

(I ran out of white chocolate coating, so I did half of mine in dark
chocolate with white chocolate drizzles for decoration, and half in white
chocolate with dark chocolate drizzles for decoration.)

HTML (The functions I am baking for are all nut-free, so this time I used
toasted coconut on the top instead of the chopped nuts.)

* Chocolate Dipped Pretzels http://candy.about

in white chocolate and then used a dark chocolate drizzle to decorate them.
Since these are for a Christmas fundraiser, I also dipped several pretzels
in dark chocolate and then used Christmas sprinkles to decorate them.)

these and froze them without putting sugar on them. Right before serving I
will sprinkle them with Confectioner's Sugar using a sifter.)

* Chocolate Dipped Banana Chips (I dehydrated banana slices in my
dehydrator and then dipped one half of each chip in dark chocolate. I used
red and green melted chocolate to drizzle over them to make them festive.)

didn't ice them. I will either drizzle them with an icing glaze or sprinkle
them with confectioner's sugar before serving.)

HTML (I froze mine without toppings. Just before serving I will cook down
fresh berries, sweeten and thicken them, and drop a bit on each cheesecake.)

* Cheddar Dill Mini Muffins (I just used my regular plain muffin recipe - from the old Betty Crocker Cookbook I think - but added 1/2 cup of grated sharp cheddar cheese and a couple of generous handfuls of chopped fresh dill. I had a very hard time getting them from the cooling stage to the freezer because they kept disappearing! LOL)
