I have used chicken in place of beef in Chili before, and it came out rather well. all I do is in the crockpot add a big can of kidney beans, a jar of spaghetti sauce, can of corn, meat of choice, and season it with garlic, onion and chili powders, cayenne pepper, and hot sauce. I add the spices a lil at a time to taste, depending on how much punch you want it to pack. you can always add more, but you can't take it out. I serve it with shredded cheddar and a dollop of sour cream... yum!
