This makes a good lemon bar.

1 one-step angel food cake mix
1 can lemon pie filling

Mix together (do not use a mixer) and bake in a jelly roll pan (10x15) at 350 for 20-25 minutes. I made a lemon glaze for the topping (a little butter, powdered sugar, lemon extract and a little water). Blend together and poured over the cool cake. This is nice because it serves a lot, it's easy to have ingredients on hand and tastes good. I would imagine strawberry pie filling would be good also.

We love the canned pumpkin mixed with a carrot cake mix and baked into muffins. Plus they freeze really well.
