Re: [frozen-assets] Questions on Garlic Bread

If you would like to do it ahead of time, what I (personally) would do is assemble, flash freeze, and package.  Then when you want it, take it out and either thaw and bake as usual (which wouldn't take long to thaw at all) or bake straight from frozen, adding time as necessary until it looks like you want it.  So my process would be:

1. Spread hamburger buns (or bread, or hot dog buns, or baguette, or rolls, or whatever) with butter and sprinkle with any herbs or spices.

2. Lay on cookie sheet in individual layer, and pop into the freezer for 45 minutes to an hour.

3. Remove from cookie sheet and package in individual meal sizes (for me, that would probably be 3-4 pieces per freezer bag).

4. Label and freeze.

5. On the day you wish to make it, take it out of the freezer in the morning and pop it into the fridge to thaw, then bake as usual when you make dinner.  Alternatively, take out of freezer when you want it and bake from frozen, adding time as necessary until bread is done.

One thing to remember is that spices generally intensify in the freezing process - so you may want to experiment with a bit less garlic than you normally would use.  Try a few pieces first (freeze for a few days then bake) and see what you think.  Personally I love garlic so if it were a little stronger that wouldn't bother me a bit.

I've been reading a few posts on here about making garlic bread (#26530, 26545 26547 26548). And I have a few questions... I've done it where you use fresh buns (hamburger) before they go old - put butter and garlic powder on them, then bake at 350 for 20 min (or so). We eat them right away.

I have a small family, DH, myself and DS (almost 5 years old). So I would like to make up some extras in advance - that way we could also do individual servings if not everyone is at dinner or for lunches or whatever.

But I'm wondering about freezing it? I saw some posts regarding this but am looking for a little more specific information. The more detailed, the better, as I could use some guidance in this area.

Can you freeze after they are baked? Or is it better to freeze a bunch unbaked and just bake as you use them?

Could you "heat" in a toaster oven (the initial time, or reheating?) (not that I have one or know anything much about them, but just wondering for the future).

If you take them pre-made from the freezer to bake, how long and how high do you bake them for? (oven, toaster oven, other?)

Do you ever do them on the grill? If so, how?

Can you freeze the plain bread first, then make garlic bread later? If so, how (specifically) would you do this?

If you store in the freezer, buttered sides together, do you remove and bake them this way? Or flash freeze so they don't stick together? Or just pry them apart prior to baking or how do you handle the freezing/packaging?

Do you ever have leftovers after they are baked up? If so, how do you handle these (freeze/reheat (specific instructions, please)? just let sit and use within a day or so? or what?)

Thanks.
Berit
