Re: [frozen-assets] stuffed peppers

I made the filling Thurs. & stuffed 2 for my DH to bake for himself as I work out of town 2 days a week. He decided he didn't want them that night so he put them in the freezer with just the casserole lid over them, sigh. He baked them last night for us & they were fine. The stuffing was too juicy for me tho. I quadrupled the recipe I found & felt it was too sloppy. I flash froze batches on wax paper & then put into freezer bags. I might try to doctor them up when I thaw out.

> I make the filling and freeze that, then on the day I want to serve I just thaw and stuff into the peppers. I haven't had good experiences freezing the peppers themselves, they break down too much (because of their water content) for my tastes.
