I have a good pie crust recipe (and mentioned in my original post that I'd
tried it for pockets). But pie crust is a) too fatty (if I'm going to be
eating these regularly, I want to at least attempt a crust that's not
terrible for me) and b) too fragile for a handheld pocket, and c) doesn't
taste like a Lean Pockets crust.
I did try the empanada crust I mentioned earlier, and it's not bad. Not
great, but not bad. And it has considerably less fat than pie crust (3
tbsp. for eight pockets, as opposed to 1/3 cup for four). I suspect what it
wants is more flavor -- the Lean Pockets crusts have a lot of herbs mixed in
and sprinkled on top. I will try that next time.
