I am still new to freezing meals so not sure how this would work! I got this recipe from Kroger and it is FAB:
1/4c chopped onion
2 garlic cloves, chopped
8oz fresh mushrooms, sliced
2 small zucchini, diced
2 14.5 oz cans crushed tomatoes
1tablespoon italian seasoning
1/2 teaspoon salt
1/2 teaspoon ground pepper
1/2 teaspoon sugar
1 rotisserie chicken, deboned and broken into chunks
8oz finely shredded italian cheese blend or mozerella cheese
1pkg chicken and bacon borsetti fresh pasta (or whatever fresh pasta you want)
Preheat oven to 400. Spray 13X9 baking dish with cooking spray.
Heat large skillet over medium high heat and spray bottom of pan with cooking spray. Add onion and garlic and saute for 1 minute.
Add mushrooms and zucchin and saute for 5 minutes. Add crushed tomatoes, italian seasoning, salt, pepper and sugar. Stir to combine.
Remove from heat. Add chicken and 1 cup cheese. Stir to combine.
Spread uncooked fresh pasta evenly in bottom of baking dish. Top with chicken and veggie mixture, making sure all of pasta is covered.Sprinkle with remaining cheese.
Bake uncovered for 20 minutes on center rack until heated thoroughly and cheese is melted and bubbly. Let stand 5 minutes before serving.
