[frozen-assets] Re: chicken casseroles - Recipes

 


Thanks to everyone who responded to my request for chicken casseroles!

Here are the "recipes" for mine. I don't have exact amounts for most of them because I just wing it. I freeze these in 2 ea 8x8 pans, as my family is only 3 people. Hope you find something you can use!

CHICKEN ENCHILADA CASSEROLE

2 cans green enchilada sauce
3 - 4 boneless, skinless chicken breasts
1 can chopped green chilies (we like fire-roasted)
1 can cannelini beans, rinsed and drained
1 cup frozen corn kernels
2 cups shredded cheddar or jack cheese
8 large flour tortillas

1) cook chicken breasts in slow cooker with 1 can enchilada sauce until you can shred them.
2) remove chicken from slow cooker and shred.
3) to chicken, add 2nd can of enchilada sauce,chopped chilies, beans and corn. Stir to combine well.
4) Spray 2 ea 8 x 8" pans (or 1 9x13) with cooking spray. Spoon a small amount of chicken mixture into bottom of pans (so tortillas won't stick).
5) Cut 2 tortillas to fit into each pan and layer in the pans. Top each pan with 1/4 chicken mixture and 1/4 cheese.
6) Add another layer of tortillas, chicken mixture and cheese.
7) I FREEZE AT THIS POINT
8) When ready to eat, bake @ 350 degrees until hot and bubbly.

CHICKEN & SWISS CASSEROLE

4 cups cooked, chopped chicken
2 cups stuffing mix
3/4 cup mayonaise or Miracle Whip
4 Tbsp milk
1 1/2 cup shredded Swiss cheese

Mix all ingredients, and pour into pans. (I like to mix the mayo and milk before I mix it with the other ingredients).
I FREEZE AT THIS POINT
Bake @ 350 for 40 - 45 minutes, until hot, brown and bubbly.

NOTE: This is a very rich dish. I usually serve w/salad.

CHICKEN POT PIE CASSEROLE

chopped cooked chicken
frozen mixed vegetables
chicken stock & flour - or - chicken gravy

If using chicken stock, mix with flour to make a gravy.
Mix all ingredients together and separate into 2 ea freezer bags.
FREEZE
When ready to eat, bake in pan, topped with refrigerator biscuits or pie crust.

CHICKEN STUFFING CASSEROLE

chopped cooked chicken
prepared stuffing
chicken gravy
frozen broccoli -or - veg of your choice

Layer chicken and veg in casserole dish. Pour gravy over the top. Top with prepared stuffing.
FREEZE AT THIS POINT
When ready to eat, bake (covered w/foil) at 350 for approx. 30 minutes. Uncover and bake and additional 10 - 15 minutes, until hot and bubbly.
