I'm assuming they already know how to cook so I wouldn't waste time cooking for
them. Just do a quick overview of what their choices are as to when to freeze -
completely cooked, partially cooked, and raw - and what dishes work best for
each of these methods.
Give them a list of things that will not freeze and what will freeze sometimes
(like things that freeze will mixed in a recipe but not by themselves or
vegetables that will freeze well to be used for cooking later but not to be
eaten raw). Teach them the does and don't of freezing eggs. Teach them the
different methods of freezing small portions.
Give them a comprehensive list of how long different things can remain in the
freezer (at 0 degrees) and still maintain maximum quality. Tell them that the
food won't spoil after the stated time but the quality will begin to diminish.
Maybe the most important thing of all is to teach them about the different ways
of packaging for the freezer and why it is important. Make sure they know what
causes freezer burn and how proper packaging can avoid it or at least delay it
for a long time. Stress proper labeling - include date, name of dish, and any
instructions they will need to know when getting it ready to serve. Emphasize
that they may not recognize what it is after it's been in the freezer for a
while and isn't labeled. I don't know of anything that turns people off of
freezer cooking faster than putting all that work into prepping the food and
then being disappointed with it when they serve it because it was improperly
packaged.
To conclude the session you might want to serve a meal from your freezer stash
or just provide several dishes for them to sample.
