Joyce –

I was wondering if you would be willing to post a sample food calendar for some of us to see. Also, you talked about how you gave your husband directions on defrosting the meal before cooking it. Do you do this for all of your meals, or do you cook some from frozen? I am not completely new to freezing to prepare, but I want to branch out and do more.

Hi Janet,

When I teach my freezer cooking classes, I hand out a sample dinner
calendar. It lists the meals I plan to cook for the upcoming week and what
I have to defrost or buy to make those meals happen. I tell my students to
put their version of the calendar on the refrigerator, or on a kitchen
cabinet door. That way they see it regularly, and will remember to defrost
the required meat in time to prepare it for the scheduled meal. It has
worked for me for years, and I promise you that if you get into the habit of
checking it regularly, your meal calendar will save you time and money.
When I used to travel a lot for business, I would leave my husband a dinner
calendar on the kitchen bulletin board that listed the prepared meals
available for him to eat while I was gone. Next to each meal I would put
how many days he needed to defrost it in the fridge before he could cook it
in the oven or microwave. It worked really well for him and has worked for
others I have recommended it to-college students, single working moms,
daycare providers, etc. Try it for a month or so to see if it works for
you.

Since I rarely need to defrost meat in a hurry, I am not one to give advice
on that. I do mine in the fridge for several days, but I know that won't
help you with your situation.
