[frozen-assets] Baking with frozen eggs

 

Tina,
  My parents used to have a source for a lot of eggs at one time.  What they did was beat the eggs, freeze them in ice cube trays then use a cube as an egg.  Worked fine.  I don't think my mother tried to do any fancy baking, but it worked for muffins, cakes, etc.  Hope that helps.
