I would leave off the frosting and freeze the cupcakes, then frost as needed.
This has worked well over the years (ie making 5 dozen cupcakes for an event)
and slapping on the frosting when the cupcake is still frozen (less likely to
tear up the cupcake as well). This works for all sorts of baked goods, bake
wrap in aluminum foil (to prevent dehydration) and freeze until needed.
