Something that works well for me, and probably would work with the
 mini-meatloaf's too, is to mix up the meatloaf mix but not bake it before 
 placing
 it in the freezer.  I found when I tried to reheat a frozen, already  baked
 meatloaf, mine tasted overcooked.  But if I froze it raw and then  baked it,
 it tasted just right.

 I have been making up my meatloaf and freezing them uncooked.  I freeze in 
 shapes that fit my crockpot(s) and then can just pop the frozen meatloaf in 
 the crock to cook. Since the newer crocks cook so much hotter, it also helps 
 my cooking time (I also often put a layer of potato and/or onion wedges on 
 the bottom of the crock before putting the meatloaf in-if the crock cooks 
 too hot or long, my meatloaf doesn't get burned and I can always toss them 
 if I have to, otherwise, they are part of the meal.  If doing the mini 
 meatloaves, you should be able to do the same thing with one of those small 
 crockettes-I think that especially for an older person who may have a 
 diminished appetite, the smell of the food cooking in the crock help 
 stimulate their appetite and they tend to eat better and enjoy the food 
 more.  They also tend to eat more regularly because they aren't just popping 
 something in the microwave when they happen to think about it.
