I shred and freeze mine in the portions needed for my breads and fritters. Then place those small ziplock baggies into a larger gallon size zip bag. Never had a problem with it. I also do the same with diced peppers etc.

Hi there. I have some large zucchini that I do not anticipate using in the
next week. Would shredding it and then freezing it (in a freezer bag) work
for future use in zucchini bread?
