I've been GF for about a year now. I know it's overwhelming at first! The very first recipe I made- and still make- was a gluten free pumpkin muffin. In the last year, my freezer has never been without this in it: 1 can pumpkin (not pumpkin pie filling) and 1 box gluten free cake mix (any flavor... but I usually use yellow). Mix the two together and put in lined muffin pans. Bake about half an hour (until done- you know the drill) and freeze. I eat them frozen. :)
When I'm starving and walk in the door, I grab these. When I need a quick breakfast, I grab these. When everyone else is eating some cake or pie I can't eat, I grab these.
