RE: [frozen-assets] Ideas for gluten free frozen meals [MOD's Question Included} [SNIPPED!]

Our Libby's canned pumpkin puree is 15oz but I've read that if you try to
replicate it with your own pumpkin you might need to strain the extra juices
off before using. Fresh pumpkin puree is way more watery than our canned
puree. Hope that helps!

Hi, I am in Australia, and where I am we don't get pumpkin in a can. Can you
tell me the size of the can and I can just maybe mash up some fresh pumpkin
to those measurements!

Thanks. These sound great.

Yes- just TWO ingredients! No eggs, oil, milk, water, etc. It's hard to
believe it's so good.

Hi Kelly,

I've been GF for about a year now. I know it's overwhelming at first! The
very first recipe I made- and still make- was a gluten free pumpkin muffin.
In the last year, my freezer has never been without this in it: 1 can
pumpkin (not pumpkin pie filling) and 1 box gluten free cake mix (any
flavor... but I usually use yellow). Mix the two together and put in lined
muffin pans. Bake about half an hour (until done- you know the drill) and
freeze. I eat them frozen. :)

When I'm starving and walk in the door, I grab these. When I need a quick
breakfast, I grab these. When everyone else is eating some cake or pie I
can't eat, I grab these.
