I don't think it's an either or proposition. I think they are all very
useful. I have not used my pressure cooker recently but it does great food.
I love it for cooking dried beans when I want them in a hurry. They only
take 15 minutes to be very soft and done. I use the method in one of Julia
Child's cookbooks.
If you have several roasts and want them nicely browned, I think using the
oven would be great. They would be brown and partially cooked. You could
finish them off in the pressure cooker and freeze them or use one in the
crock pot for that day's meal. Of course if you are only using one roast,
you can brown that in the pressure cooker. A favorite cookbook of mine is
"Joys of Pressure Cooking" by Toula Patsalis. There is now a newer updated
version, which I also have. Toula, who is also a friend, owned a major
kitchen store and taught classes in their classroom. Her recipes are all
delicious. You can make several meals quickly in a pressure cooker then store
them all in the freezer.
I have also collected cookbooks for several years. I am now giving some to
friends and relatives and donating some to our public library since I am
running out of space. And just how many thousands of recipes can one cook
over time? I read cookbooks, not just for recipes, but to learn about other
countries and ethnicities. I have a friend in another state and he has 4-
or 500. I have several freezer cookbooks and I find that you can find
different tips and information from them which helps when you want to process
food for the freezer. Pam
