I chop them up all the time and save them for future casseroles, taco
meat...whatever is going to need fresh onion cooked with the meat. Whenever I
have a few onions that are getting toward the end of their time, I chop
them up and flash freeze (lay them out on a cookie sheet in the freezer until
they get stiff). The flash freezing helps because then you can throw them
into a plastic bag and they won't all freeze in a clump. They will stay
loose enough that you can measure out how much you need for your recipe.
I have a little mini-processor that looks like the big food processor. I
use it mostly for chopping up onions. I think you can get them for about
$10 - $15. Saves on lots of onion tears.
