I tried this for lunch today since I was prepping some things for the freezer anyway.  I found ground beef on a good special yesterday so I used about a half pound for this, and I had potatoes getting kind of old that I bought and then forgot about when I got really sick a while ago, so I figured this would be simple to throw together while I was working on getting the beef and potatoes taken care of for the freezer anyway.  I roasted the potatoes right in the 8x8 dish and only used 2 of them - they were fairly large and that's all that would fit in a single layer and I didn't want to dirty another dish.  While they roasted, I browned the beef and added the remaining ingredients, then used the precooked bacon bits on top with some cheese.  I didn't freeze it, just cooked fresh.  My husband (who comes home from work for lunch) really liked it and so did I, my daughter (almost 2) ate it willingly enough, although my son (almost 4) wouldn't touch
it...but then he's in an "I can't eat that" stage, even if it's something he usually likes.  Since we used it as a lunch, there was a bit leftover, but that's ok.  It was good!
 
I'll keep this recipe on hand and try freezing it next time, thanks!

Something I cobbled together from 2 recipes, trying to please my entire family (husband, 12 yo son, and myself).

NOTE: This made one meal for the 3 of us (1 big eater, 2 med.)with absolutely NO leftoevers, so you might want to double it, or just double the meat. I tested it in the freezer for several days, and it was perfect!

4 medium russet potatoes, peeled and thickly sliced (like for steak fries, but not cut into fries)
2 Tbsp olive oil
1/2 lb ground turkey
1 tsp olive oil
1 Tbsp Worcestershire sauce
1/3 cup ketchup
3 Tbsp mustard
1 cup shredded cheddar
2 Tbsp bacon bits

Toss potatoes with 2 Tbsp olive oil and roast in 375-degree oven, turning once, until golden.
Meanwhile, brown ground turkey.
Arrange cooked, browned potatoes in bottom of an 8x8 pan.
Mix ground turkey with Worcestershire,ketchup & mustard. Layer over potatoes.
Top with shredded cheese and bacon bits.

Cover with plastic wrap & foil, and freeze. (At this point, I popped the whole thing out of the pan and into a freezer bag).

When ready to eat, thaw in fridge. Bake at 350-degress until hot and cheese is melted, about 1/2 hour.
