Sorry I didn't address that. I asked the same question when I first got the recipe and was told that was the way it was always done in the family (but apparently no one knows why). The mixture of garlic powder and salt is used when the roast is first cooked and the garlic salt is used after it has been sliced. So I've always done it that way (but I doubt that anyone would ever know the difference if you used garlic salt for both steps)!
