Thank you to everyone for your suggestions for breakfasts, snacks, and lunches. I have used many of those suggestions, and if anyone has any more unique, and yet easy ideas I would love to hear them. I also found a recipe for Sweet potato pancakes that the children love. It freezes well too!!
Sweet Potato Pancakes
3/4 cup mashed sweet potato
1 Tbsp. melted butter
2 egg whites, or 1 large egg, lightly beaten
1 1/2 cups 2% milk
1 cup flour, I use whole wheat flour
2 tsp. baking powder
1/2 tsp. salt
1/4 tsp. ground cinnamon
In a large bowl, combine sweet potato, butter, and eggs. Stir in milk.
In another bowl, combin flour, baking powder, salt, and cinnamon. Stir into the sweet potato mixture.
Heat a nonstick skillet sprayed with vegetable oil over medium heat. When pan is hot, make as any other pancakes.
I also add a touch of brown sugar, or maple syrup to the sweet potato mixture. This eliminates the need for syrup to be added to the top of the pancakes when serving. That way, the children can just pick them up and eat them with their hands! What fun!
