I would just package any of your favorite freezer recipes into portions your family can eat! My family is small - 4 of us, but 2 are toddlers who don't eat that much, so with most recipes I either halve them or split them as I'm assembling them into smaller portions.
You could check out Family Feasts for $75 a Week by Mary Ostyn. Not a freezer cookbook, but many of her recipes freeze just fine and she has a family of 10, I think. Fix, Freeze, Feast is another book that makes large portions (uses meat purchased in bulk at warehouse clubs) and divides them into 4-6 servings, but you could just make the one recipe and divide it into fewer portions which would give you more servings. Don't Panic - Dinner's in the Freezer multiplies recipes out for you, each single recipe makes I think 4-6 servings, but you could use one of the multiples of the recipes so it would make more for your family.
