Raw eggs freeze great! Don't freeze them in the shell. I make quiches ahead and freeze those raw, then just thaw and bake as normal. Eggs on their own, raw, freeze fine too. And yes, after thawing you can use them just like a fresh egg in baked goods, sandwiches, scrambled, etc.

I am going to try freezing some meals, to help on those busy days, when I don't have time to cook or the desire. Also, so I can take advantage of the sales.
1. Has anyone ever frozen raw eggs? Can I just beat them up and freeze them? Can I then use them in baked goods or for egg sandwiches?
2. Has anyone ever frozen Egg Plant Parmesan?
