[frozen-assets] Freeze Green pepper strips

 

I freeze green peppers cut in strips this time of year, and use them to make a stuffed pepper casserole instead of stuffing peppers, I lay the strips on the bottom and the top of a casserole of the meat filling in meatballs. It works great, all the flavor of stuffed peppers. I clean and cut the peppers in strips, then freeze them on a cookie sheet and transfer them to a container for storage. This time of year they are cheap and I freeze enough to last me the winter. They are really only good for cooking and I use them in chili, etc.....
