My mother finds her blood sugar numbers are much better when she eats plenty of protein and veggies and lays off the carbs.. things like pasta, rice, potatoes, corn and bread are more starchy and higher glycemic. Strawberries, berries of all kinds, and apples are among the lowest glycemic fruits. Saving Dinner makes a low carb cookbook that is excellent! It's not neccessary all geared towards freezer meals but many can be made and frozen easily.
Meatloaves, spaghetti and meat sauce served over spaghetti squash -instead of pasta -- or at least whole wheat pasta, marinated chicken breasts or pork chops that they can bake, broil or panfry and then lots of fresh or frozen veggies-- peppers and onions, various hard squashes, zuchinni that is chopped, snow peas, peas and carrots, beets, fresh dark leafy green veggies, spinach, etc .. are all good choices.
Be careful about prepared ketchup, sauces and marinades as many are packed with sugar, high sodium, and other nasty things that noone really should eat.
