My friends have been telling me there is no canned pumpkin on the store shelves right now, due to a bad growing year in 2009, but there should be a lot coming in soon, as this year was a good year for pumpkins. You can make the pumpkin + cake mix from just about any cake mix variety, including chocolate. It cuts down on fats and makes a moist cake. You can use angel food cake mix, too. To the angel food cake mix + pumpkin, you can add a small can of crushed pineapple, juice and all, and coconut, maybe about a half cup. Needs no frosting. It's a Weight Watchers recipe, low in fats and calories

Its one box of carrot cake mix and one 15 oz can of pumpkin.....that's it. Mix together and bake according to the cake recipe for cupcakes. Cream Cheese frosting is great on these or just eat plain. I put butter on mine.
