I had the same problem with tomato paste. I saw (on the Rachel Ray show) a tube of tomato paste. You squeeze out what you want and then refrigerate the rest. We found it at gormet shop, none of our grocery stores had it. They probably have it now, but I haven't had to replace it yet. That little tube goes a long way.
I freeze homemade sauce so I don't see why you couldn't just freeze the tomato products.

I should know this, since I freeze everything under the sun in one way or another, but is it possible to freeze tomato products like tomato sauce, tomato paste, and ketchup? It is SO much cheaper by the ounce to buy them in the #10 cans at Sam's, but I can't use it all up upon opening (unless I'm doing a OAMC session). Can I divide up what I don't need into freezer containers, portioned out to my needs, and freeze the rest? Does it retain its "quality" or does it become too watery or separate?
