I chop mine, spread it out on a cookie sheet and freeze it, then pour it all in a freezer bag.

Subject: [frozen-assets] Fresh Celery Question...

I have NEVER grown celery before and right now I have the most amazing celery that I have ever seen...the leaves are huge and the stalks are so full of flavour! I love having chopped celery for my soups and other dishes, but I need to harvest it now before the frost comes. The storebought stalks are so tasteless to me now.
Now...my question to all you wonderful folks is this...can I harvest and chop the celery, portion it and freeze it without any problem? Do I just flash freeze it like parsley? Thank you so much for all your wisdom and insight...love the recipes, and now that my yard is getting put to bed, I can fill up my freezers again.
