I usually get out whatever meat (which will vary for each family) I plan to cook for the week out of the freezer and put it in a plastic bowl that I use specifically for this purpose in the refrigerator on Sunday. The bowl keeps unwanted juices off my refrigerator shelf as it thaws.
I also cook for multiple meals at a time to have a 'quick' supper handy when one is needed. For example I will brown 4 pounds of hamburger or grill 3 lbs of chicken breasts (I dice up the leftover chicken breasts into cubes) and use what I need for supper that evening and I package the rest in sandwich bags. I put the sandwich bags into a gallon freezer bag and when in a hurry I can pull out pre-cooked meat for a quick supper as needed.
