I have made and frozen omelettes. They're typically ham & cheese, because
that's what I like. Ham diced tiny, and lots of shredded cheese. I cook
them. Flash freeze them on a cookie sheet. Then slide into ziploc bags. When
I want one, I take it out and microwave it - usually for about 1 1/2 minutes
- I try to make them thin.
I've also been known to "bake" scrambled eggs in a jelly roll pan, then use
a large biscuit cutter to cut them into circles and freeze them. That way I
can microwave the "disk" for 45 seconds while my english muffin is in the
toaster, add a slice of cheese to the stack, and I have a great breakfast
sandwich...
