Same for me - ground beef and chicken. It was always my understanding that as long as you cook it fully and then freeze you are fine. I have ground beef and chicken cooked up in my freezer and my son's freezer (new baby) - chicken chunked in and out of broth. One day of a HUGE mess with grease and chunking up the chicken and then I have something ready to go when I need to do something for dinner - spagetti, chili, tacos, casseroles, soups, etc. I also started doing meatballs - do huge batch and then portion out in foodsaver bags. or put the portions in regular plastic bags and then seal groups of them in big foodsaver bags.
I do subcribe to the 3 part meal - meat - starch - green veggie. Try and not go to overboard on starch as SO is diabetic.
I tend not to salt or season too much ahead because if I add it to a mix later - it can get too salty (like taco seasoning).
