Chicken parmesan is a really easy one, pretty fast too. Either bread or don't bread your chicken (your preference), bake until done, top with sauce and a little mozzarella or parmesan cheese if you like, heat through until sauce is hot and cheese melts, and serve over any kind of pasta. I would do a baked chicken spaghetti. Dice up the chicken, cook until no longer pink, mix together with cooked spaghetti (or any pasta) and sauce, then top with a little cheese and bake until everything's heated through.
