[frozen-assets] Questions on Meal Pre-Prep

 

What sorts of pre-prep work do you do? And how do you store it – and how long/how well does it store?

My situation is this:

There are only 3 of us, DH, myself and DS 5 years.

I do try to pre-cook meats (shredded chicken, ground beef) or freeze whole chicken breasts in marinade, etc.

But I am looking for other things I can prepare ahead (without cooking the whole meal in advance, although in some cases I may do some of that as well).

The other thing I was considering was things like salads… it would be nice to wash/chop, pre-prepare salad toppings maybe once or twice a week – instead of every night… especially if there's things we don't eat very much of in one sitting...likewise for taco toppings and probably some other items, as well…

That would also better allow us to eat slightly different toppings (from each other) if we wanted – if they were just in the fridge and we could use what we wanted to… because the amounts then would be even less per meal (as compared to if we all ate the same)… and not hardly worth making up each time for just one person…

How long would this stuff last in the fridge? What things like this do you do to make meal prep easier? Any other tips/suggestions for doing these types of things?

Some items I am thinking of (although I am sure there are more, and am always interested in ideas!) would be:

Can I wash these items ahead of time, or do they store better unwashed (but then isn't there more prep, i.e. cutting the day of)?

Lettuce (storing, using – do you wash all at once, or wash as you use to keep it more fresh)?

Tomatoes – wash, cut, diced

Avocado – cut or diced – can these be frozen or would they then not work very well on salads/tacos?

Cucumber – washed, cut

Peppers – washed, cut – can these be frozen for future use on salads? Or do they not turn out very good after being frozen for this purpose?

Fruit – I could probably wash/add this as we use it since there is not TOO much work involved (if I am eating whole, as with raspberries and blueberries)

Nuts – not really any pre-prep involved –maybe pre-portioning and storing, depending on how they are already packaged

Cheese – various kinds for salads and/or tacos; this would mostly be pre-portioning and storing… maybe slicing or shredding.

As I said, I am probably missing some and am always looking for ideas… and other tips you may have with respect to meal preparation.

I am trying to find ways to cut down meal prep time every night - and also be more efficient in my use of time, energy and resources (dishes, knives, etc)
