[frozen-assets] another use for frozen shredded zucchini

 

While hunting for my lemon bread recipe this morning I passed over my recipe for Zucchini Quesadillas that also contains shredded zucchini. When using frozen zucchini for this quesadilla filling, I would pat dry really well to blot excess moisture. I will post the recipe later this evening.
