Berit, most salad ingredients do not freeze well, including these:
Lettuce (storing, using - do you wash all at once, or wash as you use to
keep it more fresh)? -- I wash mine as I go, but I also store the whole
head in a ziplock in the fridge, and a head will last me two weeks before it
goes bad.
Tomatoes - wash, cut, diced -- not if you want the texture to stay the same.
The thing about freezing veggies is that the ice expands, breaks the cell
walls, and makes the veggies mushy when they thaw. Fine for cooking, awful
for salads.
Avocado - cut or diced - can these be frozen or would they then not work
very well on salads/tacos? -- I know people freeze guacamole, I don't know
about just chopped.
Cucumber -Peppers - Fruit - see tomatoes, above.
Nuts -- people do freeze them, but they keep for quite some time without
freezing, as well.
Cheese - firm cheese gets a bit crumbly when thawed, but if you shred it
*then* freeze it, it works great.
