(Ah, finally a question I can answer! LOL)
 
 Several years ago, we shredded and froze extra zucchini... and it works fine for making zucchini bread when thawed! The only thing you'll need to do differently is drain the extra liquid off of it when it thaws, and you may want to spread it out or separate it some before adding other ingredients to it, since it will be soggy and sticking together more than freshly shredded would.
