[frozen-assets] RE: Freezing shredded zucchini

 

I shred and freeze zucchini pretty much every year. As far as I'm concerned, pretty much the only thing zucchini is good for is bread. :)

But I've also been known to throw some shredded zucchini into the mix when I'm making meatloaf or spaghetti sauce. Just don't tell my husband.
