I like the suggestion of the "Hot Pot", as one who used it alot when living out of a hotel room years ago, there is a lot you can actually do with one. Smaller batches of tuna noodle casseroles, Mac and Cheese, etc. One thing I did find was to think outside of the normal spaghetti or macaroni noodles. Egg noodles cooked easier and are just as tasty, How about the old style "Boil in bag" "Seal-A-Meal" meals? Just make them individual sized meals that can be heated by boiling in the Hot Pot. Meatballs in various sauces - for sandwiches, Meat and Gravy....
When I was in college, we got around the idea of lack of cooking facilities by using an electric wok. There was no Sunday dinner at my college, we were all on our own. (OK stretching the spirit of what we could have but..." we could cook soups, stirfry rice, thinly sliced meats for a Sabu Sabu I think we called it)
