I am a big fan of soup for lunch. Soup can be easy, inexpensive and very healthy. I make a big batch and then freeze some family size portions and individual portions.
I'll fill ziplock freezer bags, place a cookie sheet in the freezer, lay the bags of soup flat on the cookie sheet and let them freeze.
I defrost on my stove top, since you want something to reheat at work find a bowl/container you can freeze and use in the microwave. Or freeze in ziplock bags, defrost the day before then place in a microwavable container the day of use.
Chili and stews are also easy and I follow the same steps.
