Hi, I think I have posted on this before, so sorry if I am repeating but I do this with many dishes and asked about 6 months ago what others were doing. I really hope to see more of this, successes and failures both! My goal is to have dished that can be put frozen solid into the crock in the morning and cook all day, or half day if I'm home.

So far, this is what worked and did not work. BTW, I bought plastic containers the size of my crock pots for this, so they fit frozen. Just soak a few minutes in hot water to loosen them from the plastic.

Anyway, what works:
chicken curry
lasagna (use less liquid, as nothing cooks out and it can be wet)
sp. sauce
meatloaf (frozen raw)
chicken broccoli (from OAMC orig. book by Lagerborg and Wilson)
whole fryers with seasoning

What did NOT work:
Asian chicken dish with ramen (ramen got mushy, chinese is best fresh)
anything chinese (see above)

The trick is to not cook it too long, but long enough and hot enough to kill bacteria, esp. on those whole fryers.

More later as I keep taking stuff out and trying it.

PLEASE, post what is working for you using this method, its so convenient!

Re: [frozen-assets] Crockpot Freezer Meals

 

I put lots of things in the Crockpot frozen and it works just fine, just takes a little longer and sometimes there is an issue of it "fitting" properly until it melts. I am part of a mealswap group and we swap frozen meals, lots of those are frozen and for the Crockpot. I love my Crockpot!

[frozen-assets] Re: Crockpot Freezer Meals

 


Love this idea! WE use our crockpot at least two nights a week as the children are in sports and we get home late on those nights.

I currently prep everything on Sunday evening and put it all in fridge for a monday/wednesday split. I am looking forward to seeing the other replies.

You are correct and the USDA advises against it. I know a lot of people figure it doesn't matter because they are going to freeze the meat as soon as they brown it but they don't stop to consider how long that meat is going to sit in the danger zone (40-140 degrees) when the crockpot is bringing the food up to cooking temperature.
Actually I know that a lot of crockpot manufacturers recommend against putting frozen foods in the crockpot and some simply warn against putting frozen meat in them.

Is it safe to partially cook ground beef to use later?
No. Partial cooking of food ahead of time allows harmful bacteria to survive and multiply to the point that subsequent cooking cannot destroy them.

As far as I know that is NOT safe.  I believe if you're going to brown meat
you are supposed to cook it thoroughly to kill any bacteria before freezing.

Q) What is meant by "flash freezing"?

A) The term "flash freezing" is used on the Frozen-Assets
list to describe the process of freezing things quickly and
individually. For example, if you're freezing whole straw-
berries, lay them out individually in a single layer on a
cookie sheet, freeze just until solid, and then pack tightly
together in a zip-top freezer bag. Many people flash freeze
items such as meatballs, chicken nuggets, hamburger patties,
cookies, and waffles -- anything you don't want sticking
together when it's time to take individual portions out of
the freezer bag.

Q) How (and why!?) do some of you boil hamburger?

A) Many on the Frozen-Assets List have discovered that
frying large quantities of ground beef can be time-consuming
and difficult, so they've started boiling their ground beef.
Boiling ground beef also cuts down on the fat content.
Bring a large stock pot of water to a full boil. Place raw
ground beef into boiling water, stirring to separate. Boil
until meat is cooked through. Drain. (You can also use
the ground beef cooking water in soup -- after boiling the
beef, save the cooking water and place the container of
broth in the refrigerator for several hours. After it cools,
you can skim the layer of fat easily off the top.) If you
want to try this method with ground turkey, do NOT
bring the water to a boil before adding meat -- add the
meat along with the cold water. Then prepare as per
instructions.

Q) I'm a vegetarian. Any special tips?

A) There shouldn't be any difficulty adapting Frozen-Assets
cooking methods to vegetarian menus (or any other special
dietary requirements). When you prepare your regular recipes,
try freezing single portions before you attempt a large batch
of freezer meals (this tip applies to any recipes you haven't
tried in the freezer before -- whether vegetarian recipes or
not). Tofu, Texturized Vegetable Protein (TVP), and cooked
dry beans all freeze well.

Q) I only have the small freezer above my refrigerator.
Can I still do a full month worth of cooking ahead?

A) The easiest way to ease into cooking for the freezer
is to double or triple recipes as you go about your regular
cooking during the week, freezing the extra batches for
later. One week of tripling recipes will give you a two
week stash of Frozen Assets with very little extra effort.

You also might want to consider twice-a-month cooking at
first until you get used to the method and used to packing
your freezer tightly. Eventually, you may be able to store
the entire month's worth of entrees in your fridge-top
freezer with careful planning. Use heavy-duty freezer
bags to freeze food more compactly than in casserole
dishes or foil pans. Freeze the bags flat and stack them
carefully. To prevent a landslide of stacked freezer bags,
store them standing on edge -- like old fashioned LP record
albums (I'm dating myself a bit, aren't I?). Clear out
non-essentials from the freezer before cooking day. Wait
until the freezer clears out later in the month before
stocking up on frozen bread, ice cream, etc. Prepare
meals with sauces to pour over noodles or rice; but to
save space, don't freeze the noodles or rice ahead of
time -- cook them up fresh when you serve the meal.

What my mother always told me was if you thaw meat then you have to fully cook it if you freeze it again.  So unless the meat was completely cooked I wouldn't freeze it. But i'd just simply cook the meat completely then freeze it and use it in the recipe as called for. I personally thing it would be ok that way, even in the crock pot.  ymmv

Sure.  I do it all the time.  The only thing to remember is that things that don't freeze well raw won't freeze well mixed raw either...for instance, if you wanted to put a beef stew kit together, you could do the meat, onions, carrots, etc. but NOT the potatoes - add those on cooking day.
