I take the celery and cut it/break it into sections that will fit into a ziploc bag. I pop it in the freezer and use it frozen in soups and stews throughout the winter. The only prep I do before freezing is lightly washing the celery. This is my third year doing this and I'm very happy with the results. Celery prepared this way is limp when defosted but that's fine with my needs. Hope this helps!
