Gosh I have never heard that (veggies don't freeze well) Rowena.
I used to blanch my veggies pat dry then lay them out on a try to flash
freeze before freezing each variety and so on as per the instructions in the
various freezer books until one day I decided I had had enough of such a
long drawn out process. Just no time. Just stopped all the helapalava as
they say and got on with it.
What I do for swede, turnip, parsnip, carrots, zuchinni, or squash is- quick
was to remove dirt (I garden) peel and either slice, dice of grate. Lay out
on oven tray and flash freeze for 45 mins approximately then seal in
individual bags or containers (date these) until required. I like to grate
carrots and zuchinni for use in cooking of vegetable pies or baking in cakes
and I usually bag the grated veggies in cup portions for easy use.
I have found no difference in the blanched or unblanched veggies when it
comes to those above.
Cauliflower and Broccoli I do blanch in a little bicarbsoda for a minute I
think it is as this returns their colour, pat dry lay out on trays flash
freeze as above.
Spinach is nice to have a little frozen for use when I am unable to grow it
although we prefer it fresh. This I wash and then wilt a little in the
steamer, pat dry and freeze.
When bananas are cheap I will buy as many as I am able let ripen well, peel
and flash freeze then bag. I use these bananas in cakes and desserts because
they have been frozen. The kids used to love frozen bananas on a popsicle
stick covered in chocolate.
Another time consuming thing I would do for a healthy snack for the kids in
summer. Ensured they got their fruit serve. LOL I also juice lemons pour
into icecube trays and freeze, have several 2litre containers in the fridge
full of these frozen cubes of lemon juice but lemons are just so dear to buy
here and so when the tree is producing instead of letting the unused lemons
rot on the ground i use everything. is wonderful to be able to use lemons
juice when ever I wish.
Sorry I have wondered off topic from the vegetables. Back to them - potatoes
do not freeze particularly well. They freeze I just don't like them frozen
on their own. they are okay once cooked with other foods. Just my humble
opinion.
