First off I rejoined the list today. i was a member long ago. I'll post an intro later.
A quesadilla is a type of Mexican sandwich. Plain quesadillas usually are filled with cheese. Some people make a single tortilla topped with cheese while others use two tortiallas with melted cheese in the middle. Some bake them, some fry them and some broil the open faced quesadillas. There are many ways to make this tasty and economical sandwich.
As to the recipe: It says to spread the bean mixture, followed by the broccoli and then the cheese on the bottom tortilla. Top with another tortilla and bake the tortilla sandwich. Remove the hot quesadilla and slice into wedges. Serve with salsa and sour cream.
I'm sure guacamole would be good with too.
