Our family has been GF since last October so I am still learning too. I
would suggest looking through your favorite recipes and see how many of them
are already GF. We found we didn't have to change too much. Of course, no
more Campbell's cream soups in recipes but we don't miss them. Right now I
have meatballs made with GF breadcrumbs packaged in two different kinds of
sauces, chicken breasts marinating for the grill, pork chops and a pork
roast all frozen and waiting. You can certainly find cookbooks that are
GF/dairy/egg free but we've been able to modify a lot of recipes that aren't
specifically labeled GF. We've switched to GF pasta and eat a lot of rice
and almost no bread/biscuits/dumplings anymore (only one family member needs
to be GF). Rice and beans go well together and also freeze nicely.
Chicken works well. You can marinate whatever kind of chicken pieces you
like in the freezer. Stir fry recipes come together fast and are super
tasty and easy. We use a Gf soy sauce (can't remember the name though).
You can slice and freeze the stir fry meat and veggies ahead of time.
I'll try to think of some more easy things that might fit your requirements.
