Hi Berit. There are only 3 of us also but I like to do freezer meals to keep the cooking down. It seems I can end up living in the kitchen. We do summer salads but I don't do a lot of prep beforehand except the eggs, potatoes, and chicken. Avocados seem to go bad very quickly so I only prepare them right before the meal. I might do tomatoes and cucumbers earlier in the day I usually save them for right before too. I grow a lot of lettuce and what I do is prep it for several days at once. I take all the leaves off, wash/rinse well (lots of bugs, dirt etc.), drain and spin and then layer between paper towels in storage bags in the veggie crisper. They seem to last longer this way.
